When booking your romantic stay, you will feel as if you are being welcomed into a country home-from-home with roaring fires, a cosy bar for pre-dinner Champagne and a restaurant that quietly boasts the longest-retained Michelin star in the UK. The candlelit restaurant is a haven for gourmets, with brilliant seasonal and locally-sourced food cooked by Michelin-starred chef, Aaron Patterson, who has been with the hotel for 25 years. Aaron’s love for game is reflected on the hotel’s menus and uses produce supplied by the local shoot at Exton. Fallow deer and muntjac are the locals and feature frequently.

Foraged food is well used too with local puffballs, blewits, elderflowers, horseradish, wild garlic, sorrel and sloes plus summer truffles picked near Oundle. Sorrel and hogweed are both prolific in this area and are delicious in salads. Home-baked breads from hotel’s own bakery feature too.

After dinner, consider a nightcap in the new, outdoor “Sitooterie” – a heated pavilion with armchairs where you can watch shooting stars on a clear night.

For the adventurous, make time during your stay to try the heated outdoor pool for quick dip, get your heart pumping on the on-site tennis court and borrow bikes (on complimentary loan) for a cycle round the reservoir. A picnic can be delivered to you anywhere along the cycle route, and the hotel can arrange a cruise across the lake.
